Gluten free flour blend for challah

Never baked gluten free challah before. This blend is made from gf oat flour, brown rice, quinoa... and I don’t remember what else.
There are instructions on the box with a recipe of what to add.
Any tips I should know?
Is this doomed for failure? Could it possibly work?

I don't know which one you're using. I've tried a few and the one I preferred most is Rorie's oat dough mix.

There are a bunch of blogs that have mixes. Buy your own of each and mix it yourself.

This is a yummy GF challah recipe that I received third or fourth hand...

Ingredients

3 1/3 cups oat flour (you can buy oat flour OR put oats in a blender/food processor to make it yourself)
2 scant tablespoons yeast (I added a spoon of sugar to the yeast even though the recipe doesn't say to)
1 1/2 cups warm water
1/4 cup avocado oil (I used regular oil)
1/4 cup honey
1/2 cup tapioca flour
1/2 cup quinoa flour (or rice flour)
1 teaspoon salt
4 eggs
2 teaspoons xanthan gum (I used something else called "Not xanthan/Not Guar" by Pamela's)
optional: 1/4 teaspoon cinnamon (I didn't add that)

Directions
Combine the yeast and water and let sit for a few minutes.
Add the oil, honey, tapioca, flour, xanthan gum and beat until combined.
Add the salt, cinnamon and eggs. Beat for a few minutes until fluffy.
Pour into a loaf pan (greased if needed) and allow to rise for at least 45 minutes until doubled. Meanwhile, preheat the oven to 350"F.
Sprinkle the top of the risen loaf with some oats (optional).
Bake for 45 minutes (check frequently the first time you bake it as time might be different: it depends on your oven).
Allow to cool before cutting.

For someone considering baking Gluten Free Challah:

1- Does it taste drastically different?

2- Which Gluten Free Flour blend tastes the best, and where can I buy it reasonably? Anything on Amazon?

3- Hows this?

I’m the op. I tried one batch of gluten free challah. I made one challah a lots of rolls. It wasn’t bad but it’s very different than regular challah and you have to be prepared for that.

Can you describe in what way it was different?

Are there perhaps any brands of flour that come closer to regular Challah?

Texture, color, taste.... it’s not like regular white challah at all! I’ve made whole wheat challah, spelt challah and it was good... gluten free was not like challah but it was okay. I bought a type of gluten free bread from Trader Joe’s and it tasted most similar to challah (really like white bread) but it’s shehakol and not mezonos.
