Im trying to cut back on the meat but we love all saucy recipes. Sloppy joes, meat balls etc. Which recipes can I get away with not having such a chicken-y taste?

I think you can.
It will taste different and beware that it may taste dryer if it gets cooked too long.
I have now for a long time mixed minced steak and chicken rather than using read meat only and its perfect.

I use dark ground chicken almost exclusively in meatballs, burgers, meatloaf. I prefer the taste.

I only ever use chicken. Adjust seasoning and cooking time.

I find the texture to be very different so I'd find recipes that are specifically for chicken not meat

absolutely. The flavor will be much milder, though, so you will probably need to amp up the seasonings. You can also use half and half beef and chicken.

Ground chicken breast is dryer so take that into account. I prefer dark ground turkey when not using beef.

We don't eat a lot of beef so anytime I make meatballs, meatloaf, etc it's ground turkey. I've never seen ground chicken in our area but it should taste fine as well.

Stir fry is really good with chicken or turkey...
...and you can make it saucy...
and you have also veggies...
and shnitzel with bread crumbs...

I really like it, just different than meat, no one likes in my house, so I haven't made it.
A friend makes balls in soup, look like knaidelach, chicken instead on matzo meal.
