What are some easy lunch ideas I can take to work? I don't have any kind of microwave or hot water at the moment, so no way of heating things up. Also, something veggie-centric, easy on the carbs, but also filling.

Apologies in advance if this is overstepping, but it might actually be a good idea to buy yourself an electric kettle to bring to work. You can use it for coffee, tea, instant oatmeal, soups, and much more. Electric kettles are not that expensive, and they can make cheaper lunch options possible, so the investment pays off.

and my favorite: mix quinoa with salsa, add in a can of rinsed black beans, a can of corn, and serve with cut up avacodo on top.

Really, just take your favorite salads and replace the lettuce with quinoa.

You're not overstepping Smile This is a temporary situation. In my permanent setup, I do have access to hot water, but figured it wasn't worth it for just a couple of months.
