After many requests I finally put a list of all the recipes my mother shared with me.
It was difficult to find some items so I had to substitute and kosherize them xD

Enjoy.

•Albóndigas

Ground beef
1 egg
Half cooked rice
Chopped cilantro
Potatoes (peeled and cubed)
Carrots (peeled and sliced)
Any other veggies can be added if you want.

Basically you just mix the beef, rice and egg and chopped cilantro until it’s all mixed up and shape into meatballs
Put it in a pot with water and skim off the gunk that comes up.
About an hr later add the veggies and cook till ready. So yum every time bh!

•Pozole
Hominy
Cubed beef (I use cholent meat lol)
8-10 New Mexico dried chili peppers (I found them online with a hechser! So worth the $)
2 garlic heads
One onion

Put the onion and 2 garlic heads in a mesh bag thing with the meat in a pot of water with a bit of salt
Meanwhile cook the New Mexico chili peppers in a small pot of water till soft
Cut lengthwise and take out the seeds and rinse
Put them in a blender with water
Add to the pot of meat and then add the hominy and simmer for an hr
Best with garlic bread! Yum!

•Frijoles charros

Pinto beans
Hot dog meat
Smoked turkey breast
Frozen chopped cilantro

Check and rinse beans
Boil for an hr in a pot with salt and let the beans soak overnight
Or if you have a pressure cooker like we do cook the beans till soft
Add to a pot of water after drained
Set aside
Fry the sliced hot dog meat and cut up turkey breast in oil
Add the entire thing oil and all to the beans
Add salt for taste and 2 frozen cubes of chopped cilantro

Omnomnom

•Tacos

Ground beef or chopped meat or chicken

Corn Tortillas
Oil
Salt and pepper
Chopped cilantro
White chopped onion
Lime juice

Oil tortillas in a pan until they are golden brown (like 15 seconds each side) and take it off just when it starts bubbling.
Set them on a plate.
Put about a spoon of meat longways in the middle of the tortilla and fold it in half.
Do the same thing with the rest of the tortillas.
Add onion
Add cilantro
Spray lime juice
Eat.

•Enchiladas
Corn Tortillas
2 cups of chicken stock (get a pareve chicken cube and boil it in water or use chicken consomé I personally use the stock cube)
Oil 2 tablespoons
Flour 2 tablespoons
Chili powder (4 tablespoons)
Garlic powder 1/2 teaspoon
Salt 1/2 teaspoon
Oregano 1/4 teaspoon
Cumin 1/4 teaspoon
Cheese (Mexican blend cheese)

Dry tortillas in oil till golden
To prepare the sauce whisk flour and oil together
Then mix in the broth and spices until thick and smooth. It shouldn’t be soupy.
Dip tortillas in the mixture and roll into a pipe
Add a little more sauce on the top of the tortillas and add the cheese and bake for like 10 min or till the cheese is melted.
Yum.

•Enfrijoladas
Same as the above but use beans instead of the sauce by cooking pinto or cranberry beans and blending it in the blender with water) or buy the eden pinto beans can)
Add a bit of chili powder and salt and mix well.
Smear it on the tortillas
Add the cheese.
Bake for 10 minutes

•Quesadillas

Tortillas
Cheese (Mexican blend or cheddar or mozzarella)
Butter or oil

Fry tortillas in oil until golden
Add the cheese
Fold the other half of the tortilla over the first half
Fry till the cheese is melted and the tortilla is nice and crunchy, but not burnt.

•Rice and beans

One can of tomato sauce
White rice
Salt
Oil

Cook rice in oil until golden and add tomato sauce with salt.
When it starts boiling turn down the heat to low and leave it for about 15-20 min until all the liquid is absorbed
Warm up cooked pinto beans
Add salt
Mush it
Add a bit of chili powder for extra taste

•Sopes

Corn flour
Water
Salt
Beans
Chopped fresh tomatoes
Lettuce
Cheese

Mix flour with water and salt and shape into small bowls (the rims are folded up) let stand for a few min
Fry it
Add cooked pinto beans in the “bowl”
Lettuce
Tomato
Cheese (feta or cheddar or Mexican blend)
For a meaty version you can add ground beef or shredded chicken or meat without the cheese
Add hot sauce
Yum.

•Flautas

chicken breast
Tortillas
Small white onion
Salt

Boil it in water with SMALL white onion and salt
Boil till soft (approx 45 min)
Take fork and poke chicken and move around if meat comes apart it’s ready
Shred chicken

Warm up tortillas on a griddle or on a pan if you’re a daredevil.
Put a bit of chicken in tortilla. Not too much or it will overflow and make a mess.
Roll into pipes
Fry them in oil in the pan

Add guacamole
Salsa
Sour cream (pareve version!)

•My mothers hot sauce

3 tomatoes
A clove of garlic
2-3 jalapeños depending how spicy you want it
Salt

Boil tomatoes and jalapeños in a pot until it’s soft.
Put that in the blender with a bit of the water that was with the tomatoes and peppers.
Put the clove of garlic in
Salt
Blend

These are not exactly diet friendly so eat at your own risk!

Thank you so much! I love Mexican food but rarely make it because my husband DESPISES beans, so I'll definitely be trying some of the beanless recipes for us Smile

Would I ruin everything if I left the cilantro out? For some reason, no one in my household, including myself likes cilantro.

Also, what are cranberry beans? Is there another name for them?

Cilantro adds a ton of taste to the food so if there was a substitute for it I’d tell you but idk of any lol.

They look like pinto beans

Thank you! Dh is obsessed with Mexican authentic food. He watches documentaries and shows on Netflix about it and makes corn tortillas and his own salsas from scratch (the sauce kind) from different Chilis he buys in ethnic food stores. also he made mole. He eats tacos multiple times a week.
Do the enchiladas have any filling?
We really want to make tamales but will it taste good without the suet, pork, or dairy ingredients? Do you have a kosher recipe for that?

You can make tamales with anything there is also sweet tamales The trick is to put tons of oil on the dough so it won’t be dry you can do them with chicken and salsa Or chicken and mole or cheese
You also have to wrap them well in banana leafs or corn leafs and cook them In a special way that I don’t remember right now LOL
I think is in the pressure cooker with little water but I might be wrong Banging head

Yes it will taste just fine! And still authentic.
We make tamales with cheese, or chicken+jalapeños. I've even seen sauteed mushrooms in place of meat, although I haven't tried it.

If you can, get a special type of treated corn flour called "Masa harina." Maseca brand is CRC pareve. Follow the instructions on the side to make the tamale dough.

My hack is, if you don't have banana leaves, you can use precut aluminum sheets (presumably parchment paper might work as well but I haven't tried it yet). Just form the dough and filling into a rectangular shape in the middle of the sheet, then fold up and place into a steam basket or tray (like from a rice cooker or a bamboo stovetop steamer) until cooked through.

I can't find the stuff in Israel, and it's sorely lacking. Sad Arepas just aren't the same.

The bolded part...where?? I muuuust get some!
I get the Mexican red dried chilies online BH it has a hechser (apple k) but sometimes I wanna make something but I don’t have the chilies and I don’t wanna wait a few days lol

Better to ask a knowledgeable LOR, but if the husks are just dried without any processing? I don't see why it's not like any other vegetable - check for any known, visible signs of bugs, and otherwise enjoy!
