Cauliflower rice

Anyone cook this? What did you do with it? Does it get soggy if you boil it?

You don't need to boil it.

Are you using frozen bodek, or fresh?

Either way, you just give it a quick stir fry. Frozen, grate in a food processor and then stir fry to get the extra liquid out.

Fresh, stir fry with just a few tablespoons of water to steam it.

You kind of want it to be "al dente" like good pasta, not mushy. Overcooking will ruin the taste, too.

A really good side dish is to mix it in equal parts with canned (drained) lentils or frozen lentils, and stir in some onion soup mix. You can add diced sauteed mushrooms and onions to it, too. If you want to make it extra fancy, stir in some shelled edamame beans for bright color contrast.

Yes! My favorite thing to make is cauliflower kugel.

8 cups riced cauliflower (use frozen usually, but you can also use fresh)
1/2 c oil (I used olive oil)
1/2 c water (I usually put a drop more)
5 eggs
2 t onion powder
2t salt
1 t pepper

Mix, pour in 9 by 13 pan (or 2 square), bake on 450 for one hr and then lower to 350 for another hour.

I made cauliflower pizza last night and it was delicious.

I know this is an old post, but would/did you cook the cauliflower rice before mixing it with the other ingredients?
