Easy way to menu plan is to work around a basic toddler food amounts chart, like this:
2-3 tbsp protein
4 tbsp (1/4 cup) grains/carbs
1-2 tbsp veggies
1-2 tbsp fruit
For example
1 hard-boiled egg
1/2 slice bread
1-2 tbsp mashed carrots
1-2 tbsp craisins
Etc. It's just a guide though and you'll notice your baby won't eat sometimes or will eat it all, or will only eat XYZ and not ABC, but later on will eat ABC etc etc. You can change it up by adding things like dairy.
My toddler for dinner today, for example, ate probably 1/8 cup of pasta and 2-3 tbsp scrambled eggs. She didn't touch her roasted veggies (but to be fair I knew that they weren't her favorite veggies). She had her fruit (a fresh fig) a little earlier for a snack.
That being said, again, this is just a guide. Don't drive yourself crazy if one meal you don't serve a veggie or a fruit. Just make sure to serve your toddler a variety of foods and eat with them. Better yet, serve them smaller portions of your own meals!

Here's what my one year old ate today if it's helpful:
breakfast: a ton of cheerios, grapes (cut up small), milk in a cup
snack #1: milk, animal crackers
lunch: frozen broccoli that I steamed in the microwave, crackers, cut up string cheese and there was one more thing but I don't remember what it was right now.
snack #2: plain yogurt with mashed up blueberries mixed in
dinner: cut up strawberries, scrambled eggs, corn

The only thing my 1 yr old actually ate was broccoli sauteed with garlic. He rejected everything else I offered today. Cream cheese bread, yogurt, mango, avocado, plum, tuna, crackers.
He nurses still. That seems to be his preferred food source still. I was impressed with the broccoli and garlic. Good for him!
