Since I am incapable of making honey lekach, I found other cakes and cookies containing honey to replace it.
So in case you are interested, here is one receipe, and feel free to add your own:
(100g = 1 cup)
Almond-honey cookies
4 eggs
500 g brown sugar
125 g ground almonds
125 g slivered blanched almonds (sticks)
1/2 cup honey
375 g flour
1 teaspon baking powder
1 pack vanillin powder
1 tablespoon cinnamon
1 teaspoon clove powder
Mix all ingredients, spread on baking sheet (should be 1/2- 1 inch high)
Bake 45 minutes on 150°C.
Spread a dense mixture of powdererd sutar and water on it as soon as it comes out of the oven...
Cut in squares. let cool.
Keep in tin box.

Keep in mind that many don't use nuts during the time period when they would want 'honey' items.
I'm, personally, not a huge fan of honey cake and I find it rarely gets eaten at my house. I tend to make a honey cookie with added cinnamon that seems to be more popular.

But almonds - shekdim is not the same as nuts - egoz...

So I wouldn't worry too much. All gematria has some meaning which you can choose to attach to it or not, especially in the season of simanim.

Honey-almondpaste kichlach (100g = 1 cup)
3 sticks of almond paste (looks like a sausage, about 10cm long, 2-3 cm in diameter)
100 g honey
60g sugar
50 g shortening
Heat up those three ingredients to mix them together, let them cool, add
250g flour
1,5 tablespoon baking powder
1/2 teaspoon ginger powder
1/2 teaspoon cardamom powder
1/2 teaspoon cloves powder
1/2 teaspoon star anis powder
1 egg
Mix all ingredients into a smooth dough.
Let rest in fridge for 30 min, covered by plastic foil
roll out dough to a rectangle 0,5 cm thick, 10 cm wide, 30 cm long
(best between two sheets of plastic foil, because it's sticky, remove upper plastic foil)
place almond sticks on dough and roll it in, so that you have a dough-almond stick sausage
paint with eggwash
cut into pieces about 2 cm long.
place on baking sheet
Bake for 20 min on 200°C
