Capon filling

I searched for ideas already, but my question is a little more specific.

I have capons and I have pastrami. I was thinking I would do a layer of pastrami with something else inside each capon. What filling would go well with the pastrami? Any sauce to smear on the inside or on the outside?

Ive filled with pastrami and rice mixed with a little duck sauce, salt and pepper

You can do a russian dressing (ketchup, mayo spices) and a layer of pastrami, turkey or other cold cuts and roll up. Coat with same dressing (and dip into corn flake crumbs if u like) and bake.

I have a recipe that I make for pastrami stuffed chicken roast . Technically a stuffed capon is like an individual stuffed mini chicken roast . This is the recipe idea .

Stuff capons with pastrami
Place in pan
I a small bowl mix :
1/2 cup honey
1/4 cup mustard
1 tsp cumin
2 crushed garlic cloves
Pour over chicken .
Cover tightly and bake for 1 1/2 hours on 375
Uncover chicken and raise heat of oven , bake for additional 15 minutes while basting the chicken and it should be a golden brown color.

I do my stuffed capons differently but the sauce I use is :

First season top of chicken with the typical spices you would season chicken with and then make a mixture of honey, ketchup and mustard and pour on top. Bake covered and uncover the last 15 minutes to half hour

Sautéed onions, mushrooms and mix with rice and pieces of pastrami.
You can shmear duck sauce or apricot jam on the outside

I use a sweet mixture of dates, diced roasted almonds and soaked prunes for the stuffing, and a sauce containing honey (and mustard, ginger, garlick, soy sauce, coke, sesamy seeds) for a marinade and orange slices on top...

I don't think I have enough pastrami to serve as the filling. I wanted it there to enhance the flavor of whatever filling I put.

Can you post it please ? IT sounds interesting . My recipe has Tam Tam crackers and veggies but doesn’t call for pastrami.

I found a recipe of pastrami kishka on here as filling for capons. Tried it was delicious!

Here you go for my pastrami filling.

5 slices pastrami, can be turkey pastrami
1 roll snackers, crushed
2 onions
1 rod celery
4 tb oil
1 pc Garlic
Salt and pepper to taste

Saute vegetables. Add pastrami and snackers.
Stuff the capons. Pour 1.5 cups of duck sauce over them. Bake covered for 1.5 hours on 350 and then bake uncovered for additional 10 to 15 min.
Hearty appetite!
