I wanna make babaganoush dip for Yom tov and can't find an exact recipe. (some salt, some mayo, bake for some time, doesn't really work for me}

Any help will be appreciated

Wash eggplant and pierce with the tines of a fork. Wrap in foil and place into a baking pan (to catch any drips).

Bake at 400 until soft, about 1 hour and 15 minutes.

When cool enough to handle, scoop out eggplant from skin and place into a container. Add 2 garlic cloves, 2 tablespoons mayonnaise, 1/2 tablespoon lemon juice and mix well with a fork. Season with salt, taste, and add more until tasty.

I do the same but I use an immersion blender instead of a fork.

Yes, I forgot to add that you can do that. I just prefer if with more texture.

I use techina instead of mayo and I drizzle silan on top

Do I cut the top of pre-baking?

We grill it on the stove wrapped in silver paper Then let it sit in a strainer for the liquid to run out.
We put mayo and diced onions And salt.
