I need a good recipe for black eyed peas.
I have a bag of dried.

I toss the cooked beans with salt pepper and sugar - like chickpeas. They're delish.

Yup, I make them every year and they're delicious!
Soak then boil them just like you would any other bean. Thinly slice and caramelize a couple of leeks (bonus siman!) in a generous amount of olive oil and finely chop a bunch of sun dried tomatoes packed in oil. Mixed the cooked peas with the tomatoes+some of the oil they came in, the leeks and their oil, add honey, balsamic vinegar, and salt. Mix and let sit for a day or two if you can.

I saw an interesting recipe for black eyed peas chummas in a Hadassah magazine article that you can get online about a black Jewish chef and his desire to blend both food traditions. The article is "Michael Twitty's Jewish Soul" and the recipe is under culture and travel/food. It's a bit spicy looking and you can tone it down.
