Why do Capons need to bake for 2 hours? It reached the safe temperature of 180 degrees way before.
Doesnt too long baking dry out the chicken?

chicken bottoms don't dry out that fast. Under 2 hours it won't be soft enough.

I bake them uncovered 1 hour 10 min

They are cooked a long time so that they will be soft.

Different size birds? Its about 15 minutes a pound, plus another 15 minutes if its stuffed.
