Chicken cutlets

Hi
I'm looking for ideas for recipes using chicken cutlets for Friday night. Not schnitzel
Preferably easy and not sweet Smile

Basically, you want to make sure that there is a liquid or sauce that is going to keep the chicken from drying out. Just BARELY cook the chicken, so that when you put it on the blech it will finish cooking in the center but not get over done. Cutlets are tricky that way.

Stir fry with veggies, over rice. If you hate veggie prep, buy a bag of frozen mix.

Chinese chicken with cashews and snow peas (google for recipe, it's really easy.) This is fancy for when you have guests, and is very impressive.

Diced chicken in a veggie soup base with noodles. (kids love this one)

Chicken in mild curry sauce. Buy the sauce in a jar. Keep hot sauce on the table for those who like it spicy.

Chicken stroganoff. Sautee mushrooms and onions, and then add chicken. At the last minute, add parve sour cream, or parve cream cheese thinned with a bit of almond milk. Season with salt, pepper, and paprika to taste. Serve on top of egg noodles. (This is great with beef, too. Nobody will believe it's not meat+dairy. It's creamy and decadent.)

You could just sear them in the pan, with salt, pepper, a bit of paprika powder.

The oil should be hot enough when you put them in.
They should not be too thick.

Then it takes just about 3-4 minutes on each side.

Or you could marinade them in Terriyaki sauce and sear them in the pan.

Or you could make your own marinade, for example with mustard, soy sauce, a drop of wine, garlick, paprika, salt pepper and a few sesamy seeds...

Or you could make a mushroom sauce: sear the cutlets, take them out, sautee onions in the pan, add sliced mushrooms, add some kind of parve milk or cream, with a little bit (1 tablespoon) of starch, mix in the starch well, put back the cutlets, serve with rice or hashed browns...

Or you could make any kind of stir fry... Just chose 4-5 kinds of veggies you feel are compatible (eg zucchini, eggplant, soy sprouts, broccoli, mushrooms) and sautee quickly in pan, set aside, cut chicken in slices, sear them, add veggies, add soy sauce (or other liquid, like white wine or marinade)...

I a gree with Frantic Frummie: If it's for Friday night, it's better to have enough sauce, so you can keep them warm as long as you need...

My kids love them sprinkled with onion powder, white pepper, tumeric, sour salt on both sides. Then seared on high heat in pan. Serve with Israeli salad. Very bright and tender.
