OP, I understand how difficult it is to care for a sick husband while little kids are underfoot. I had that scenario years ago when DH had a bad case of the flu because he never got around to getting the flu shot like the rest of us. After a week of taking care of everyone I sent my kids to my parents for Shabbos so I could concentrate on taking care of DH and get some rest myself. So I really do get it.
Unfortunately, we live in different times now. The rules are very clear about quarantining the whole family if just one member is sick with covid-19. Yes, it's difficult. If you had asked for ideas on how to make quarantine easier rather than asking if you have to follow the rules this would have been a very different thread. I will echo the other posters who suggested that you make things as easy as possible for yourself by relaxing rules about screen time and ordering in or asking friends/relatives to send in some food.
