Hersheypark program isn't opening this year : (
It looks like Niagara is with a sukkah and food, but too far away from New York for us. I would really appreciate any ideas-we just have teenagers! TIA!!

Lake George has a sukkah I believe. You could check on Jiminy Peak, Lancaster, and the Poconos. Niagara's sukkah wouldn't help you since I assume it's in Canada, which is off limits to non-Canadian citizens right now.

We have a large pop folding Succah.
You could also make one cheap out of a shower tent as long as the opening is halachically large enough and it’s stringly anchored into the ground.
We wanted to go but DH likes a minyan chol hamoed and the places I found the minyanim are a far drive or they aren’t letting outsiders join the minyan due to covid.

We’ll be ‘camping out ‘ in our sukkah and going to parks.
Perhaps visiting grandparents if nice to be outdoors with them since they are being careful these days.
I’m hoping for one outdoor amusement park to be open on a nice day

We always do state parks, they're very affordable. Usually about 15-20$ a night, depending if your camping in or out of your own state.
We haven't booked yet. Probably in Pennsylvania, around Amish country.

My husband and kids are building one. Part of the fun . They've spent many afternoons drawing up designs, and it gets fancier and fancier. We'll see what it actually ends up looking like. The basic structure will be a cube frame lashed together with rope or zip ties, a schach roll on top, some slats across the midline of the frame (like a chair rail? This is apparently a halachic requirement.) No actual walls.
One of our Covid lockdown activities was building 'shelters' at every state park we went to. The only materiel we carried with us was rope for lashing. My kids and husband built some really cool structures from branches, trees, brush. I'm pretty confident the succah will get built, and will stay up. If it collapses, my husband will have to stick to shehakol foods or rebuild!

How about a hike?
There are amazing state parks- bring a picnic... stick with shehakol snacks if need be.
Bring a ball, frisbee, books...
Look fo a hike that involves a waterfall or a small creek if it's warm.
