Not celiac, but gluten effects his whole body, miserable on it. Thus sticking to gluten free.

Amother Amber, as previous posters said, you cannot understand it until you've lived it and may you never learn firsthand what it's like to have a child who is allergic to most of the things you and your family eat on a daily basis. May you never feel the heartbreak of watching your child cry for the most basic of foods and the struggle of trying to create edible allergy friendly versions of the food everyone around them is eating.

Made by mixing flax meal with water. Don't remember exact measurements off hand but you can Google it.

I have a family member who is gluten intolerant but is OK with small quantities of Sourdough especially when made with low gluten flour. I know allergies and intolerances are not the same but maybe a low gluten, non-wheat Sourdough would be worth a try.

Recipe recently shared with me.
May work.

6 pounds oat flour
8 cup water
2 tsp yeast or baking powder
1/2 cup honey
8 tsp salt
1 1/2 cup olive oil
2 cups almond milk

Instead of eggs:
1 cup water
1/2 cup ground flax
3 tablespoons chia seeds

Let it mix for a long time in mixer.

Dip your hands in olive oil between making each roll. This recipe can't handle big challahs...I dump in muffin pans

Put a dot of raw honey on top of each roll.
350 approx hour.
Warm up on Blech before serving. Makes a difference.

Hi, I make this for bread and eat it every morning... I bake in a loaf pan and cut in slices once cooled.

Oat Flour Challah

3 C oat flour (must say gluten free)
1 1/2 tsp salt
1/4 C sugar or equivilent
1 packet yeast
2 eggs or equivilent of flax seed mix below
1/4 C oil
1/4 C rice milk
3/4 C hot water
2 1/2 tsp xantham gum

My child can not have gluten, due to allergies, not celiac.
