For roast- slice onions, carrots,celery
Add- salt, pepper paprika, garlic, bay leaves
A little water, set on medium
For vegetarian- Make a soup: sautéed onions and carrots, then add beans and veggies, soup mix, salt, pepper, water until top,

I made these today for lunch actually!
Sweet n sour crockpot meatballs
1 bottle chili sauce
2/3 jar of jelly/jam/preserves (raspberry, grape, cranberry all work great)
Juice of 1/2 lemon
1 lb ground beef
1/2 diced onion
2-3 eggs
1/2 cup - 1 cup breadcrumbs (add more as needed for proper consistency)
Salt, pepper, ginger, chili powder
If the consistency gets a little dry, squirt in BBQ sauce as needed
Combine sauce in crockpot. Let melt together on low while you mix the meat together. Form golf sized meatballs and place gently into crockpot. Stir. Let simmer on low for about 3 hours; stir at 1 1/2 hours and check how fast it's cooking (some crockpots run hotter than others).
If you don't like chili sauce (not as hot as it sounds by the way, especially with the sweetness and lemon to cut it!), here's the sweet n sour sauce recipe from the Purple Cookbook
3/4 cup ketchup
1/4 cup brown sugar
1 cup cranberry jelly (you can use grape, raspberry, etc instead if you don't have)
2 tsps lemon juice
I add a drop of salt, ginger, and chili.
Mix together and use as above
