I usually only slice after it has cooled in the fridge for several hours, but today I'm going to need to slice it while it is still piping hot. Is it possible to do it neatly that way?
Please share your tips!

It’s not possible unless you turn it into pulled beef.
As far as I know you can only slice oyster steak when it’s hot.

You would have to slice it into thick slices. Put on gloves. Hold it together with one hand and slice with a good meat knife with the other.

The only way to somewhat cool it in an hour is to stick it in the freezer, which isn't a good idea. It's impossible to get nice slices when the meat is hot. It will fall apart.

But then how do you reheat it without drying it out? Just a general shabbos/yom tov question I always have.

I reheat it in a lot of sauce on the hotplate and comes out delicious.
But, does that mean that you usually slice when hot? If that's the case, I want to hear from you
Please let me know how you do it and what it comes out like!

If covered tightly with foil it reheats nicely. Make sure there’s liquid.

I slice thick slices, they are far from beautiful looking. I sometimes have better luck with a smooth knife instead of serrated. I just find with a roast if you slice and then reheat, it looses it's pink color inside.

I reheat the meat in a sauce covered tightly.

You save the juices that it roasted in and place it back into the sauce when you're done slicing. It keeps it moist

If you're serving it right out of the oven/pot, you can slice thick slices of meat. Otherwise don't do it. Just put it away to chill and slice it on YT when it's cold, before reheating.

I meant only Fri night, and only if the food was on the plata before Shabbos.

I only do it for Friday night. No issue if you put it on the hotplate before Shabbos.

Thick slices are fine. I guess I just don't want a mess of broken chunks and bits, which I thought might happen.

Only cut think slices while hot if you're serving immediately. If you plan to still reheat those thick slices, they won't survive.
