No mushrooms!
Can I use diced red pepper instead- and turn it into a pepper sauce?

Depends what kind of sauce...
If it is mushrooms with cream or parve cream I would not advise to take peppers instead, it does not go together... If it is a meat sauce... I don't know...
I'd rather take zucchini (but also not with milk or cream)

Yes. You can make a sauce from onion, garlic, red pepper. Add thickener with starch whisked in, and simmer until thickened.

The balabusta choice 2 has a nice pepper sauce which goes over chicken / schnitzel

If you're back to eating nuts, you can make a romesco sauce with tomatoes, red peppers, and hazelnuts/almonds
