Hi imamother bakers--how do I scale down a challah recipe that uses 5 pounds of challah?
I use a kitchenaid mixer so I need smaller recipes but I really want to try some 5 lb recipes that look so good. The kitchenaid-sized recipes I use usually use about 4.5 cups of flour.
Will big recipes work if I just decrease the 5 lb recipe in the ratio of 4.5 cups to 5 lbs?

I have 8-9 cup recipes that will probably scale easier than a 5 lb recipe
My water challah recipe is from imamother and I’ve made it in 4.5-cup amounts

Use a kitchen scale. Measure out 1.25 pounds flour (20 ounces - about 4 1/4 cups of flour - but not exactly, so measure with the scale). And quarter the rest of the recipe.

I make a half of a 5 pound recipe in the kitchenaid every week.
