Miriam pascal has a recipe for garlic stuffed challah in her cookbook real life kosher cooking. You can leave out the stuffing and it’s still a heaven recipe.

Challah
1 1/2 tablespoon dry yeast
1/2 cup very warm water
1 teaspoon sugar
1 1/2 cups warm water
1/2 cup sugar
1 tablespoon salt
3 cups flour, packed
1 egg, lightly beaten
1/2 cup oil
3 cups flour, packed
1/4 cup flour, for kneeding
1 egg, for egg wash
sesame seeds
Mix together yeast, water and sugar. Wait for yeast to activate and bubble until double in size.
Add remaining water, sugar, salt and flour and mix with a spoon.
Then add the egg and oil, continuing to mix.
Top with the the remaining flour. Using your hands this time, begin kneading into a good dough, removing from bowl onto clean surface once combined. Continue kneeding. Prepare an extra 1/4 cup flour and sprinkle as needed while kneading until dough is just no longer sticky. (But it should not be dry!)
Cover with a clean kitchen towel and rise for 1 hour, punching down every 20 minutes. Take challah (skip bracha for this size dough).
Braid into 2 challahs and place into small greased loaf pans. Cover loaves with towel and allow to rise 1 additional hour.
Preheat oven to 350.
Brush challah with egg wash and sprinkle with sesame seeds.
Bake until golden, about 45 minutes.
