Moroccan fish isn’t simple (lots of spices and veggies) but I heard of a great hack (though I never tried it).
Slice peppers and onions. Season salmon. Pour matbucha over the fish. Bake.

Saute one clove of garlic, sliced, in oil, add a handful of red pepper strips (I use frozen), (you could also add diced tomatoes, a handful of chickpeas) a tablespoon ketchup or tomato paste. Season with salt, paprika, cilantro, fresh or frozen and a dash of cayenne pepper (I skip, my kids dont like) add enough water to form a thickish sauce. Let it cook for 2 minutes, then add the fish pour on it a tablespoon of oil and paprika mixture (prepare in a cup beforehand). Then let it cook covered on medium flame for about 20 minutes or until looks done. Dont overcook. Enjoy!
