I always need extra coating when I shake the shnitzel in a bag to coat or it doesn't coat properly. I usually throw out the extra crumbs (especially since touched raw chicken). Is this what others do? Does anyone save it in their freezer for next time they coat shnitzel?

I've made schnitzel-hold-the-chicken-latkes with the remnants.
Mix the leftover egg and breading, form into patties, fry after frying the cutlets.
Definitely don't save.
