This is My go to easy and quick healthy supper. I make diff versions of it a few nights of the week.
Sheet pan sprayed with pam.
Down the middle of the pan cleaned chicken cutlets. (I freeze them individually and pull them out as needed). On the sides bagged frozen vegetables (stir fry, Italian blend, broccoli, cauliflower...)
Sometimes thinly sliced potatoes or sweet potato on one side. Slice thin or won’t cook in time.
Spice depending on mood (salt, pepper, garlic pwdr, paprika, soy sauce, honey, ...). Spray well with pan.
Broil about 5 min. Flip chicken. Mix veggies. Broil another 5 min. Cover anything burning with foil (sometimes potatos). Broil another 5 min or longer as needed.
Typically supper can be ready 20-25 min after starting the process.

Sky, that sounds great, but can you give more details with the spices/sauce? I'm not a great cook and can use more specifics (I.e. honey with soy sauce? By itself? How much? Etc)

I fit the spices to match the vegetable.
So stir fry veg I’ll drizzle both soy sauce and honey. Soy sauce also on chicken. Then salt, pepper, garlic on both chicken and veggies.
If using broccoli I’d only use salt pepper and garlic. (No honey or soy)
If using cauliflower maybe I’d use Zattar.
I try to use flavors I know we already like in those vegetables. I don’t really have a science - just what I think will work. You could stick to basic spices and will still be very good. Because I do this so often I try to change the flavors slightly.
