Ok, I know this is a HUGELY controversial topic, even for Imamother LOL ... but I am planning a cold milchig shabbos lunch (I live in the southern hemisphere and it is scorching right now!).

I need some ideas for interesting and different salads and some type of dairy or vegetarian protein dish.

Tall order, I know, but I'm sure the Masterchefs of Imamother will have some brilliant ideas.

Beet and feta salad, yum
If you are having fish , what about ceviche
Black bean sweet potato salad with a lime dressing. I like mark bitman’s recipe

Halachicly that may be problematic. Anyhow, fruit cup, upbrosia and cold fruit soup are all very refreshing. Turkey salad or .... sorry can't give you mulching ideas

Greek or mozzarella salad
Nicoise salad
I wish hubby would agree to this on really late really hot Friday nights, but no dice

You don’t have air conditioning?

I’m thinking about things I serve for a nicer shalosh seudos..

Challah and dips
Fish - could be salmon or Gefilte
Pasta salad
Lettuce salad
Corn salad
Room temperature Lukshen cheese kugel
Melon
Milchig ice cream for dessert

I mostly do milchig lunch on shabbat, and in summer mostly cold. I generally fill 5-6 appetizer trays with a choice of what you find below, then I may have a soup then a protein (fish), a carb (kigel or pie or carby salad), 2 big salads and desert...

It's really rich, no-one starved up to now:

Appetizers
Guacamole
Baba ganush
chumus
t'china
butter (!!!!! yeah!!!!)
sour cream with dill
yoghurt with garlick
eggs with onions
deviled eggs
baked eggplant slice
baked zucchini slices
baked eggplant slices in yoghurt
baked eggplant slices in tomato sauce

Appetizier salads
beetroot
grated carrots with pinapple
grated celery root with mayo & lemon juice
Waldorf salad
tzatziki (grated cucumber salad with yoghurt & garlick)
cucumber salad (sliced or grated, with paprika or with dill)
Red cabbage with apples & cranberries
avocado with cherry tomatoes

veggie sticks (carrot, cucumber, celery stalks, bell pepper)
cherry tomatoes
radishes
olives
sliced tomatoes with basil and mozarella

Soups:
Gazpacho
or
cold cucumber soup with yoghurt
or
fruit soup

Main courses:
Salmon (either smoked or cooked or baked in oven, all are fine cold)
or
Tuna patties (mix tuna, eggs, a little bit of oats, salt, pepper, fry in pan)
or
Tuna-mushroom strudel (you can mkae it either with challa dogh or with strudel doughor with puff pastry): mix tuna, tomato paste, sauteed mushrooms, put on pastry, roll into strudel

and

kigel (potatoe, zuchhinin, squash, zucchini/carrot, yerushamlm)
I often do the kigel in muffin moulds, so there are many (different) small kigels, rather than large ones)

Sometimes I also line the muffin mould with a rest of thinly rolled challa dough, so it becomes a little pie)

Burekas
spring rolls

Pies: (you can use either challa dough or puff pastry or pie crust)
broccoli pie

Quinoa salad
potatoe salad
noodle salad
rice salad

Salads:
I usually serve 1-2 salads with the main course, one green and one mixed)
exampel:
Israeli salad
mixed veggie alad: cherry tomatoes, cucumber, corn, bell peppers, (onions),

roman letttuce

chicoree with cherry tomatoes

lettuce with mango, sunflower seed, cranberries, cherry tomatoes


Some dishes taste better if you can warm them up a little on the plata (baked salmon, cheese pie, tuna pastilla, burekas, potato kugel, pie, strudel)

I can give you receipes on demand...

Also it’s brought down somewhere about eating something warm on shabbos... that’s probably a minhag though

This does not indicate being against halacha. It indicates some people holding by something. What is the source to show that you must have warm food on shabbos? Think about the implications of that kind of HALACHA.

I think this beautifully illustrates the issue of people conflating minhag with halacha.

This! thank you. A hot coffee or tea I believe suffices for this as well. But it's gotta be hot.

Salads-
Fennel- slice fennel thinly, fennel seeds, Lemon juice olive oil
Heart of palm, yellow small tomato, avocado
Kohlrabi - I do a take on Waldorf salad cubed kohlrabi, sliced celery, cashews, mayo lemon, sugar, black pepper
Roasted veggie platter served room temp
Peppers, onions, Japanese eggplant, broccoli, cauliflower
Spinach salad - I make it with mandarine oranges and a honey mustard dressing
Chickpea salad- chickpea, sliced peppers all colors, sliced red onion, thinly sliced radish, dress with olive oil, salt, fresh chopped garlic


Quichés can be served room temperature

For Shavuot I made a very pretty cheese board
with an assortment of cheeses, crackers, olives, you can add dried fruit and marmalades like fig

A Rav I spoke to said that a family needs (lehalacha) something hot to prove that we hold of Torah Shbeal Peh. However, one person drinking a hot tea or coffee or even a formula bottle with an oz of water satisfies that requirement.

OP, I went to a very elegant cold Kiddush that could have been a seudah.
Yogurt, granola, berry layered in parfait glasses
Guacamole, salsa, been dip, nachos
Pasta salads
Feta salads
Salad bars with toppings
Sushi
Salmon, whitefish. Most recipes are yummy cold.
Of course dessert must be cheesecake and ice cream.

I always have hot water/hot beverages on shabbat.
this would fullfill the halacha of having something warm...
Also I eat warm on friday evening.

But in summer, when it's hot, I often do not use the plata, just the water pot.

In the days of the gemara, the "pleasure" of shabbos refers to fish and cooked spinach; the custom of eating meat on Shabbos was added later on, but is a custom, not halacha. The "pleasure" of Yom tov, on the other hand, was/is meat.

ETA: I brought this as a "proof" as to why it's okay to have a milchig meal on Shabbos. There is no halacha of eating meat on Shabbos (and if there was, there would be a halacha of eating fish on Shabbos first most likely!)

Which also imples that you should NOT eat it if you don't like it, since it should be a PLEASURE...

Too many people force themselves or their children to eat this or that on shabbat or yom tov, but that's not the idea... it should be a pleasure!
