We do this all the time, Greek salad, sushi salad, gazpacho or fruit soup, quiche, roasted veggies etc are all good cold/room temperature

This is a very good salad for a milchik meal.

Arugula goat cheese salad

chanchy123's bagel and lox and cbg's cheese board are both great ideas.

Sweet milchik noodle kugel is good served at room temperature as well.

Salmon, quiche, pesto pasta with parmesan cheese and mozzarella cubes. Ceaser salad.
Plus delicious dairy desserts, cheesecake, ice cream...sounds yum to me!

I’ve never heard you have to have something hot. We usually do because hot food is good, but we’ve been away and it wasn’t possible to warm up.

We do this a lot recently since we don't have guests due to covid and all my family likes milchig. For long shabbos afternoons I leave the chicken soup on the plata and people often eat that for shalosh seudos.

Challa with butter and garlic topping.

Butter

brie, camembert and other yummy cheese. (really this is enough for my lot...we don't need any more lol)

Salmon with pesto (or any other salmon recipe)

or pasta pesto with avocado, tomato

salad with feta

room temp quiche

or egg salad

You could also do a pareve soup in the crock pot if you want something hot. Blended soups work well.

Cheesecake or ice cream or cinnamon buns with cream cheese frosting for dessert.

I'd do salmon, sesame or pesto noodles, asparagus, quinoa avocado salad, maybe caprese skewers and little shots of hot espresso.
