I don't think I have any mushrooms.
What soup can I make that is close in texture and taste to mushroom barley soup.
Need advice asap.

Saute onion and garlic. Add a mixture of small diced vegetables. Then barley, bay leaf and water. Simmer 1.5 hours.

If you caramelize the onions and garlic on low heat in the oven or in a saucepan first, it will give a rich, meaty taste.
