I'd like to make banana bread/cake using oil--not margarine. This is kind of time sensitive. Please help if you have a recipe. Thank you!

This is the ultimate recipe, please excuse the bad handwriting (it’s not mine, my bedt friend sent me the pic and this is what I use). I add a bag of chocolate chips and sprinkle cinnamon sugar over the top.

I never use margarine, for anything. If you have a recipe (cakes, cookies, whatever) that you like, you can replace margarine with an equal amount of neutral oil. It works best if you emulsify the oil in with the eggs and sugar (easy enough, just mix them on high for a minute or two. It'll thicken up a bit).

This one is great. The kids love it.
BANANA BREAD
2 eggs
1/2 cup oil
1/4 cup sugar
1 tsp. Vanilla
1/4 cup orange juice
2-3 bananas, mashed (preferably very ripe)
2 cups flour
1/2 tsp baking powder
3/4 tsp baking soda
Mix first 5 ingredients. Add remaining ingredients and mix well. Pour into 2 small greased loaf pans (or a 9” round). Bake at 350 for approximately 45 minutes.
