I haven’t made in years. Kasif or karpiyon. It’s often sold ground with the bones. So be careful. Some supermarkets have. You can get at fish stores.

My friend does for Pesach and Sukkot, and then it normally lasts a month or so. It's too much work to do every week. She goes to a fish shop in Geulah and buys the fish, then grinds it herself, in the food processor. She normally uses karpion, but has used salmon once or twice at her daughters request. She got the recipe from her grandmother, and doesn't share it with anyone. There are probably traditional recipes on line.

Hi! I make my own gefilte fish, You can buy. Skinless and boneless ground fish at any fish store these days .It's not like years ago. My basic fish ratio is 3 kilos ground karpiyon , either with 2 killos of kasiff or one killo kasiff with one killo ground buri or ground salmon. In other words 5 killos ground fish all together. I'll be happy to post exact ingredients and instructions in about an hour and a half. Sorry I can't do it right now.

Sauteed onions. Lots of them.

I don't have the recipe, but I've watched my friend making them often enough to have a general idea.

I realised a few years back that Sauteed onions make the fish dark in color and the taste a little strong

Can this be true ?

Sorry it took me so long to give you my recipe! Here it is:
To 5 killos ground fish - 3 killos ground karpion and 2 killos ground kasiff
Or one killo ground kasiff and one killo ground buri or salmon .all together 5 kilos
1 kilo sugar . I add more. We like it sweet
15 eggs
7 tablespoons salt
Either 2 tablespoons white pepper or any or one T. white and one T. black pepper
10 fried onions
Can add about 4-5 shredded carrots.
Mix the eggs with the spices. Add onions and than add fish. It's a very delicious recipe.
Should yield about 13 -14 loaves.
I lay a piece of baking paper on the counter put fish down the middle and close edges of paper and wrap into a roll. Than wrap in saran wrap. You can put each wrapped loaf in a loaf pan and freeze or lay them them next to each other in larger disposables and freeze. Don't pile them up.
One more tip. After you finish mixing the fish mixture it will be very soft so refrigerate it over night. The mixture will firm up and the loaves will form better.
Hatzlacha!
Lichvod Shabbos Kodesh!

OP, many stores sell American brands of loaf gefilte fish.
The recipe above was exhausting just to read.
