This was very easy and a nice way to fancily humdrum baked salmon.
Salmon With Pistachio Crunch
Excerpt From: Johnnie Gabriel - Second Helpings
Serves 6.
4 (6-ounce) salmon fillets*
teaspoon salt
teaspoon pepper
4 tablespoons Dijon mustard
4 tablespoons butter or margarine, room temperature
3 tablespoons honey
½ cup soft bread crumbs
½ cup chopped pistachios
¼ teaspoon chopped parsley
1 to 2 lemons
Preheat the oven to 350 degrees.
Sprinkle salmon with salt and pepper.
In a small bowl combine the mustard, butter, and honey. Brush on the fillets.
In another small bowl combine the bread crumbs, pistachios, and parsley.
Roll fillets in the crumb mixture and place in a 13 x 9-inch baking dish. Squeeze the juice of ½ a lemon over the fillets and bake for 20 to 22 minutes until fish flakes easily. Use extra lemon slices for garnish.
* Any firm-flesh fish, such as grouper or amberjack, will work with this recipe also.
