DH doesn't eat meat so I would like to make meat separately to warm up and serve separately for whoever would like. What kind of meat would work, reg cholent meat? And how would I make it ( preferably in the oven)?

Can you just wrap it separately in the cholent, or will he not eat the cholent if it’s cooked together?

You can make a parve cholent and make any roast on the side
Personally I like brisket

Do you guys want meat in the cholent specifically? I used to make parve cholent when we were cooking for vegetarian, and nobody missed the meat in the cholent. We served a variety of cold cuts on a platter alongside the cholent.

We really don't, but sometimes I'm in the mood. n yom tov, when I made a roast for the first night, I served the leftover shabbos day w the cholent and I realized cholent is actually better w meat.

Find a pan that fits the meat snugly, not too big. Lay down sliced onions on bottom. Lay down meat and brush with oil and season well. Drizzle a few tablespoons of water around the sides of the pan. Cover and bake until tender.
You can put the cooked meat on top of the crockpot shabbos morning to warm it.
