Uncovered. Veggies just need to be tossed with oil and salt before threading onto the skewer.

From the Bais Yaakov Cookbook
2 tsp cumin
1 tsp coriander
1tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp turmeric
2 Tbs olive oil
2 lbs chicken cutlets, cut in cubes
8oz fresh white mushrooms, quartered
1 pt cherry tomatoes
1 red onion in wedges
1 bell pepper cut in 1 inch pieces
8 12 inch skewers, soaked in water 1/2 hour
Mix spices and olive oil. Marinate chicken in spice mixture 8 hours-overnight. Thread chicken and veg into skewers, starting and ending with chicken. Bake at 375 for 20-25 minutes.
