My deli roll is always raw

In the middle but the outside burns. I use puff pastry dough.

I roll it out as thin as I can.

Any tips?

I started using small puff pastry squares which is like an individual portion and they look pretty, cook evenly and dont burn - but I do check them after around 15 mins to catch them at the point where the top is nicely done but not burnt.

I roll out one puff pastry dough. Add mustard, honey and duck sauce, deli. Roll up. Bake 350’ for about 25 minutes.

I had the same issue I started using the mini pastry sheets and I make individual ones. They cook much better and look fun to serve.

good idea.

superwify - I cut slight slits on the puff pastry and bake for an hr until golden brown.

Interesting. I do it a similar way and bake it for 45 minutes and it doesn’t burn. Do you make slits after it's rolled up?

Don’t load up on the sauces. Use a teeny amount and spread until it’s basically gone. I do a heaping teaspoon of mustard and mayo spread super crazy thin, then lay the deli out. Roll it up, and pour the duck sauce over top.

I've noticed when I do not roll the dough out thinly enough, it is raw in the middle. Make sure you roll it thin.

You can always lower your baking temperature to 325 and bake for longer.

Put a piece of foil over it. Remove it for the last 10 min or so and cook it longer.
Is the heat in your oven accurate?

How do your cakes come out?

Perhaps the air circulation in your oven isn't up to scratch?

Or if you are making it while making lots of other items, perhaps your oven is too full for the air to circulate well. If you think that's the case, the overhead fan can help to pull the air up and out, allowing better circulation.

Mine is always perfect- I cut deep slits- almost all the way through and bake and 425 for about 25-30min

yes! same! that's what solved the problem for me! also, that lets the duck sauce from the top seep all the way in, tastes really good that way.

Slice it hassleback style(almost all the way cut in slices)and put it in the pan in a horseshoe shape. Bake and push back together as soon as it comes out of the oven.

I cut slits. I don’t know exactly how long I bake it but 1 hr seems very long. I’ll try it though cuz I’m too lazy to make individual ones! Thanks all!!
