Very easy to make and better yet - no one would suspect that it is so easy to make LOL

Mock Spinach Souffle or Baked Creamed Spinach

Serves 6 to 8.

2 (10-ounce) packages frozen chopped spinach, thawed
2 tablespoons butter
1 clove garlic, minced
½ cup heavy whipping cream
1 egg
½ teaspoon nutmeg
2 green onions, chopped white and green parts
¼ teaspoon kosher salt
½ teaspoon pepper
½ cup grated Parmesan cheese
Nonstick cooking spray

Preheat the oven to 350 degrees.

Squeeze all the water out of the thawed spinach and set aside.

In a small microwave-safe bowl, melt the butter with the minced garlic for about 30 seconds, or until the butter is bubbly. Set aside.

In a large mixing bowl, whisk the heavy whipping cream, egg, butter mixture, nutmeg, chopped green onions, salt, and pepper. Stir in the spinach and combine. Stir in the Parmesan cheese.

Bake in a sprayed 8 x 8-inch baking dish for 20 minutes.

* Parmesan cheese has a lot of salt in it, so you can use less salt and still be flavorful.
