Anyone have a good recipe for avocado brownies? Or another baked dessert (not like a mousse or ice cream) that I can make with avocados?
I have a bunch of ripe ones that I can’t eat all at once!
I googled recipes and there’s so many out there- wondering if anyone has a tried and true one?

I'm waiting for someone to immediately react, "I'll take other desserts, thank you."
I think I saw a recipe in the Oprah magazine; you can check her site.
There are also good salad dressing recipes, enchiladas, etc.

Where are you that you are getting ripe avocados?!
Over here, they are big and pretty, but hard as a rock. They never ripen, they just go brown inside without ever softening. Not only that, they cost a fortune.
We have the glossy light green ones right now, not the black, bumpy Haas avocados that you get in the summer.
I use them measure for measure, in place of mayonnaise or butter in recipes. Salad dressing, dips, spreads, muffins. You can Google recipes by ingredient, and get more than you ever imagined.

Just don't make avocado chocolate pudding or mousse. I don't care what anyone says, it's GROSS!

Avocado pudding.
You can cut in half, remove peel and freeze. They freeze beautifully.

I’m in NY. A neighbor gave me a whole bag of them! They’re often pretty expensive here too, so I usually just buy when on sale.

Once they’re ripe they go into the fridge and really can stay fresh there for a while.

In case anyone searches for this and wants the same thing, I’ll give an update.
I made 2 batches of these, and they came out pretty good! It’s nice and fudgey. Just don’t overbake because then it gets dry really fast.
My first batch I overbaked, so I served it with peanut butter spread on top, and that helped.
For the second batch, I just added about a tablespoon of peanut butter in the batter, and it’s so much more moist.
