So I've switched over to spelt for a week or so, and didn't make challah yet (got from a friend and it was delicious! Kids didn't notice any diff) but I saw a recipe in balabustes choice 2 for spelt challah I'd try.
I've just substituted spelt flour for regular in cake and cookies, but feel like breads need a bit more care?

You can more or less sub white spelt for regular flour although I know ppl say that spelt is more like whole wheat and needs more mosture I haven't found that to be true. I've been baking with spelt only for a few years.
My challan recipe is
5 lbs spelt flour
2/3 cup oil
2/3 cup honey
4 tablespoons dry yeast
3 3/4 cups warm water
3 eggs
2 T salt
My breakfast roll recipe is
1 cup plus 2 tablespoons warm water
1/2 cups melted coconut oil (olive oil also works)
2 tap dry yeast
Let it activate for a a good few minutes
Then add
1/4 cup sweetener (we use honey)
1 1/2 teaspoon salt
3 1/2 cups spelt flour
