I’m putting it in individual baking cups, with a square of chocolate in each. Servicing with ice cream. Should I undertake them, and then leave in the oven tonight till dessert? Oven is on 275 usually

If you don’t have that many cups, let them stay warm on the top of your cholent pot.

Sounds delicious!!!
If you're oven stays on put them on the stove by the vent, it should stay warm.
Just so you should know, you cant put cold ice cream on top of warm molten cake on shabbos!
You can serve ice cream on the side on little plate nxt to cake!
Eta: I think cakes will be way too overbaked if you leave them in oven so long!!

You can bake them halfway and then leave by the vent
