We’ve just discovered that a family member is gluten intolerant, and molino flour came recommended.

Can it be used as a 1:1 substitute for regular flour, or does it need to be used in special recipes?

If I do need new recipes, please share any that you have! Specifically would appreciate challah and pizza dough recipes, but will be grateful for any. Thanks!

I'm not sure if it's a brand name.

Apparently it's wheat flour stripped of gluten fibres; it's a newish product...

Anyone else heard of it?

I have a cookbook that came with the flour. How’s your hebrew?

Not terrible... If they're not too complicated, I can probably understand recipes

You can also look into Einkorn, also good for gluten sensitivities (but not celiac).

That's a recipe on the package for challah. It comes out great. There are two flours available one is hamotsi and one isn't.

They sell it in Israel. I buy it in yesh.
I use the shehakol one for pumpkin muffins and blondies and I do it a little less than 1:1

Gluten is what makes the dough stick together. So I suppose with gluten free, you need other techniques to shape the dough (e.g. a baking pan, or add eggs, or so).

In the case of pizza, you could also use cauliflower for the crust. Check out cauliflower pizza on youtube.

I didn’t realise there were two different ones - I ordered a few bags from yesh and I see now that they say they’re shehakol Sad

Can you post a pic of the hamotzi one so I know what it looks like?

Thanks!

Does anyone know where to buy the Molino hamotzi flour in the U.S.? Or is there an equivalent here?(I've tried the Rorie's already, looking for something closer to real challah)

You can’t buy it here and there is no equivalent. Bobs bread mix is ok. I don’t think it’s hamotzie. Rorie has a few gf mixes. Dewy got one shipment of molino but it’s expensive and she’s not restocking.
