Dense Challah in Mixer

I normally prefer to make challah by hand, but recently I've been using my mom's mixer from time to time. The problem is that my challah comes out super dense when I knead with the mixer. I'm not sure what I'm doing wrong. The dough is not tough, I follow the recipe. Is it possible I'm overmixing it? Any tips?

Yes, it sounds like you are over-kneading the dough. This is easy in a mixer because it goes so much faster than kneading by hand. Try checking the dough every minute or 90 seconds until you figure out just how long it takes to knead in the mixer.

Maybe you put in less water. I suppose when you knead by hand, you feel if you need to add more water or flour. In the machine, you just put it in and it has to be the right proportions.

Overkneading might also be an issue with the machine, while it is almost impossible by hand.
