Can I make potato knishes that are not mashed? I'm thinking to put puff pastry dough in a muffin tin and boiled potatoes cut up but not mashed with all the mixins and not close them. Does that makes sense? Will it work?

As long as they are boiled until soft and then mixed with something like sautéed onions and other seasonings, maybe paprika for color, it should be fine.

So... potatoes covered in dough? OK I don't see why not but doesn't sound like knish.
