Question says it all.
I make it.
I notice a different taste and maybe texture too when I eat
1) the kugel after candlelighting (we eat a small meal after lighting idk why)
2) the kugel at the seuda.
How can I make it taste like it’s fresh? I hope I explained myself well.

You do explain yourself well but the fact of potato kugel is that it tastes one way fresh and another way a few hours later. It cannot taste the exact same later because even keeping it in the oven on a low flame for many hours just changes the taste.
I personally enjoy all stages of kugel.

You can pour water on top when rewarming. It won’t be the exact same as fresh but pretty close.

What you can do is enjoy it fresh on Friday, then wrap it and turn it into overnight texture.

What about the taste? Idk if it’s me but candlelighting kugel tastes way better than the seuda kugel. I don’t know why lol

I might have misunderstood but just pointing out that once you light the candles and accepted Shabbos, you're not allowed to eat until you hear kiddush.

You are hungrier. or Kugel sets. Its not the same right out of the pot or oven as it is a few hours later. We put it directly on the blech or wrapped in foil in the soup pot.
