Super easy no mixer, no margarine cookies/cakes

Pupa cookbook chocolate chip biscotti recipe, you mix it with a fork and you can make cookies or biscotti out of it.

1/2 cup oil
1 cup sugar
2 cups flour
1 tsp baking powder
2 eggs
1/2 cup choc chips

1/2 tsp cinnamon with 2 tsp sugar mix and sprinkle on top of the 2 logs formed.

Bake at 350 for 35 - 40 minutes

Cut into pieces and rebake for 10 minutes.

Disclaimer: this is from my memory although I think it's pretty accurate

Tip 1: I never rebake it after I cut it, it's much softer like that which we enjoy
Tip 2: I add 1/2 cup oats to it to make it slightly healthier and it's yum

I think the original recipe was a 9x13 with a crumb topping. I like the crumb topping. But I think ra_mom likes better without. Crumbs are here:

Fool-proof. I make all sorts of other flavors by substituting flour for the cocoa powder (usually about half the amount) and adding a teaspoon of the other extract (in addition to the vanilla). Lemon is a family favorite.

Only two changes: use a bowl. It is very hard to mix even the thinnest batter in a pan. And use parchment paper. It just makes life easier.

Lol. I literally just made this.
Wanted the quickest cake possible for Shabbat and this is my go-to for chocolate cake.
Definitely mix in bowl. I grease the pan.
I also sometimes make cupcakes with it Very Happy . Sometimes I add chocolate chips to the cupcakes.
To gussy it up I sometimes make a quick glaze from coconut cream + bittersweet chocolate.

I make the hershyes brownie/chocolate cake
its so moist and yummy
we LOVE it!
I sometimes add cinnamon
I usually use just a fork

Hershey's 'Perfectly Chocolate' Chocolate Cake
2 cups sugar
1-3/4 cups flour
3/4 cup cocoa
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup Parve milk (soy milk, rice milk, almond milk... non-dairy creamer works too)
1/2 cup oil
2 tsp vanilla extract
1 cup boiling water

Preheat oven to 350°F.
Whisk together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla and continue mixing. Stir in boiling water (batter will be thin) and continue mixing until smooth. Pour batter into 2 greased and floured 9" round pans.
Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

This cookie recipe is so easy. I normally double it and bake as a log and slice. 1 recipe make squares in 8x8.
It’s easy to dress up and many times I’ll drizzle with chocolate and nuts for a kiddush.
1 times the recipe mixes easily in a bag so don’t even make a bowl dirty.
It is very good.

Ingredients
1 cup oil
1 cup brown sugar
½ cup granulated sugar
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon salt
2 eggs
2 tablespoons cornstarch
2½ cups flour
1 bag (about 1 -1 ½ cups) good quality chocolate chips

Preheat oven to 375ºF. Line 2 baking sheets with parchment paper and set aside.
In the bowl of an electric mixer, beat together oil and sugars until smooth and creamy.
Add the vanilla, baking soda, salt, eggs, and cornstarch, beating well to combine after each addition. Add flour and beat until just combined. Add chocolate chips and stir to combine.
Scoop the dough using a medium cookie scoop (or a heaping tablespoon) onto prepared cookie sheets. Bake for 8 to 9 minutes, until the tops are set. Do not overbake.

Would it still for some need to be Kemach Yashan?
I am sure there are those who only use heimish brands.

Duncan hines is not heimish brand/heimish hechsher so ppl that are makpid on that wouldn't use.
Yoshon depends on manufacturing dates. Any product could be yoshon or not. Ppl that are makpid on yoshon can check on yoshon.com

I always double bec the original doesn’t make a lot.

Sometimes turn it into spice cookies with this added to the recipe:
1 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1 T Cocoa
Replace choc chips with white choc chips

Sugar cookies great for Chanukah shapes
3 eggs
1 cup sugar
3/4 cup oil
2 1/2 tsp vanilla
2 1/2 tsp baking pwdr
2 T orange juice
4 cups flour (add more until not sticky. Sometimes an additional 1/2 cup)
Mix all ingredients. Roll and cut with cookie cutters. Bake 350 for 9 minutes.

Also mocha cake from by cookbook is fantastic.

There are so many great recipies that don’t need mixers I rarely take mine out. If I really need I’ll use my food processor when making potato kugel to beat eggs.

I make a bundt cake every Shabbos and cycle through the mocha cake, chocolate cake, cinnamon cake, lemon cake. Never need a mixer. Sometimes I’ll try something different but these are the ones I fall back too.

Karat or Sky, would you be able to post the mocha cake? Thanks!
