Hi all! I have tried many recipes of kokosh cake and somehow my filling doesn't come out right in all of them - you can taste pieces of it, it's not moist and soft like bakery made. Can someone tell me what I am doing wrong, and also may be post a failproof recipe? I want something very moist and dense, with lots of chocolate...Thanks so much!

Do you mix the cocoa with oil to form a paste first? Confectioners sugar blends better than regular sugar.

No, cuz the recipe always says to spread the oil and then sprinkle the filling...Should I may be mix the whole filling in the food processor to make a really uniform paste?

Never Fail Filling;
5 cups sugar
2 cups cocoa
1 cup flour
4 T vanilla
2 T cinnamon
2 T coffee (diluted in a tiny hot water)
1/2 cup oil
