Normally I'd serve a roast for Yom tov and heat it up on a hot plate. Given that Yom tov is on shabbos this year, I'm looking for ideas of what I can make in the crock pot that will not be ruined by 18+ hour cook time. Something nicer than a cholent.

Pulled beef.
Put sliced onions on bottom of crock pot. Put in brisket (#3 in Israel)
Pour a bottle of bbq sauce and cook for 24 hours on low.
Shred with 2 forks before serving.
You can serve with mashed potatoes or make into sandwiches. Serve with Cole slaw.

You could do a chuck roast several ways.
Over potatoes, onions, carrots, and sweet potatoes and covered with tomato sauce.
Another way is to sauté a ton of onions and place the roast on top and cover with some onion soup mix, water, and wine.

For succos, I made short ribs in the crockpot. In israel, it's known as Assado. I sauteed onions, made my own bbq sauce and poured it on top. Came out delicious! It was so soft..literally fell off the bone on its own!

The brisket is also a great idea. If you don't love the BBQ flavor, you can make a sauce out of soy sauce, honey, and crushed garlic. Or ketchup, onion soup mix, water, and a splash of vinegar. Pulled brisket is pretty forgiving, you just have to make sure it is covered totally in liquid. Also, I would use a crockpot liner with a few inches of water between the pot and the bag. Enjoy!

I just saw today in the Mishpacha Magazine and asked DH about it
Please ask your LOR.
You can put raw meat in the crockpot.
Set the crockpot with a timer to go on on Shabbos, so that the meat only cooks for 8 hrs., or less if you set it on high.

Yes, you want to braise it low and slow with sauce.
