Me and my friends used to sit in the back at school speeches and decide what animal, color, and food different people were.

I took the test and am Tagliatelle. I've never heard of it before. I had to Google it.

They ARE different!!
Long, thin, slurpy pasta goes with thin or creamy sauces. So sesame noodles are long and oily, Alfredo sauce goes on fettuccine, etc.
Chunky pasta stands up to thicker sauces, and the more surface area and little crevices to sop up sauce, the better! So use spirals or rigatoni for a beefy tomato ragout, etc.
That said, I’m a bucatini. Relatively rare and unknown yet a favorite to those who know me, floppy-bodied, and empty on the inside. 😜

I wanted to add lots more options to the poll but got bored of typing them out; my device was lagging and it was taking too long. But all you tagliatelle, radiatori, linguine, tortellini, cannelloni etc are equally loved and accepted here...

Different shapes go better with different sauces, but a plain unsauced fettucine doesn’t taste different to a plain unsauced penne...

Mouth feel!! Texture!! Slurpableness!! Resistance to bite!
How much you can fit in your mouth at once (you can fit a whole nest of angel hair but a tagliatelle folds like a ribbon)...
(My kids eat so much plain pasta, they rinse it lightly with water v’zehu.)
