Do you remove some of the fat from flanken?

I usually use different meat for cholent and this time I bought flanken. It looks more fat than meat...

Do I use it as is or should I remove some of the fat?

No. It gives the dish even more tastier. For chulent use for sure not

But how does everyone eat the meat? I have guests Shabbos day and don't want anyone to be put off by chunks of fat...

The fat will melt in the chulent,you won't see chunks of fat flouting in the chulent, the fat will give the chulent a taste.

Most of the fat melts gives the cholent a great taste.
If there are chunks you'll see it when you put out the cholent and can take it out then.
