Some ice cream does and some doesn't.
Depends on the type - custard based ice creams contain eggs. I have seen recipes that call for cooking them and those that don't.
Commercial ice cream also often contains eggs but I think that is less of a concern b/c they're pasteurized, like the egg used in commercial mayonnaise.

I've done this using a chocolate pie crust.
It's delicious!
