I have children ranging in age from 3-15. Are there any good activity suggestions that we can do as a family that all would enjoy?

Baking and decorating gingerbread/sugar cookies.
Geocaching.
Kickball.
Tie-dye.
Gardening.
Scavenger hunt.
Hiking.
Board games where you team younger kids with older, even if they just move pieces.
Backyard camping.
Building forts.
Bike riding.
Country theme days: research a country together, find/make costumes to resemble that country's native dress, learn words in its language, cook native dishes together (for example, one day do Mexico. Look it up together on a map. Learn to count to ten in Spanish. Wear sombreros. Cook up quesadillas.)
Bonus: these are all covid/lockdown friendly activities.

The age range is a tough one. Not too many activities appeal equally to 3 and 15 year olds.
We love geocaching, hiking, camping.
We also love artistic activities. We've gotten very interested in epoxy resin over the past few months, and I find it appeals equally to my 5 year old and my 12 year old. Femo clay is another one that we've all enjoyed. We're also a big lego family.

I will add
hama beads - I have similar age range and we sometimes have the whole family sitting round the table with that. For the 3 yr old you might want the bigger beads, depending on the child.
Painting - get small canvases, and use the ear bud method, it reduces the mess, and even younger kids wont end up with a brown smudge painting
Tasting game - never too old or young!

I once printed a family portrait as a puzzle and kids of all ages had a lot of fun putting it together (whose eye is this?)--but probably best for age 5 or 6 and up.

Def family game night. Pair them up older with younger....charades for ex is for all ages.
Craft can also be decopatch...good for all ages,
painting (all watch a tutorial and follow If you like)
Quilling (we make birthday cards etc)
Anything In the kitchen works for all ages
..pizza making (everyone makes their own and you have dinner )
Cupcake making and decorating
I like making a dinner en famille as an activity. 2 kids cut salad , 1 makes meat filling, two folds the borekas, 2 make brownie, 1 can make a special lemonade, etc. 1 can even make name cards, a menu...you can go on and on.

My kids love paint parties. We did it a few times all around dining room table!
I buy canvas in Michael's when they're on sale(7pcs/$11) and wait for a coupon to buy the paint! It's so much fun !
We look online for things to paint.
