My simple shabbos:
Fri night:
Challah (bought or from the freezer)
Chicken soup and chumus
A chicken dish
A cooked vegetable
A Kugel (generally made in advance and frozen)
Dessert (some baked good and dried fruit)
Shabbos lunch:
Challah
Chumus and fish (gefilte or herring depending on my mood)
Chicken or meat dish
Fresh salad
Kugel
Dessert
Shalosh shudes:
Challah
Chumus
Hard boiled eggs
Fish
Cut up veggies
Dessert.

I never thought of our meals as very simple but judging from the other thread, I guess they are.
My basic template is:
Friday night:
Challah - no dips. The challah I make is sweet and we enjoy it on its own. Also, if we ate dips with the challah we would not have room for the rest of the meal. As it is, it's sometimes a challenge to eat dessert...
Soup (I have a rotation of about a dozen soups)
Roast chicken (whole or pieces) of some sort
2 carbs and a cooked veg. Often this includes a kugel. I make lots of different kugels.
Dessert: usually some sort of cake or crumble and/or parve ice cream
Shabbat lunch:
Challah
Plated green salad (I customize so every one gets only the veggies that they like). Often I'll make a cabbage or cucumber salad too.
Chicken/schnitzel or meat or (rarely, and only during the winter) cholent or a dish made with chopped meat like Shepherd's pie or Tamale pie.
2 carbs and a cooked veg. (different selection from Friday night)
Dessert: same idea as Friday night but usually a second cake/crumble. I like to bake.
When we have guests I will usually make fish or something else for a first course other than the green salad and maybe one more side and a second protein.

Me I keep it very simple. It comes around every week, there is no time to faff about. If I'm having guests I'll make much more of an effort but we've not had guests for a long time bc of covid.

couscous or mashed potatoes
Can't get much simpler than that.

There was a period of time when my husband rolled in the door 10 minutes to Shabbos. I work full time, and with no cleaning or husband help, we perfected the super simple Shabbos meal:
Store brought challah
Store brought chumus
Enormous pot of chulant eaten both Fri night and Shabbos day, usually with a bag of couliflower or butternut squash or both in a cooking net added to the mix
Chicken soup for Friday night
Dunkin heinz mix cake or brownies
And that's it!
