When I broil chicken Friday afternoon and then cover the pan with aluminum foil and put on the blech, the crispiness disappears and the chicken is very good but soft.
Is there a way to keep the crispiness?

Keep it uncovered, and if you can, in one layer.

Will it stay hot if it's uncovered? I always cover it so that it's piping hot.

As long as you don't put it on straight out of the fridge, it should be fine. You can also cover it lightly and leave a part open.
