None of them taste like thyme but I think any of them would be fine.

Thank you. About how much would be a good amount? I know dried herbs are different than the frozen ones

You can put in any of the other herbs. They're not the same, but just put in the same amount. I think most similar would be rosemary, but even that is quite different.
You can also just omit.

That's great. The bay leaf will give it enough flavor. The other herbs you have don't belong in onion soup. I'm not a big fan of thyme in most dishes, but if you can ever get a fresh sprig and you're making onion soup it'll add a nice zing. Not a strong flavor, just an undertone that will make you wonder why the soup came out so good!
